Chocolate Chunk Financiers
I love making financiers whenever I have leftover egg whites in the fridge. They are so easy to make and also to flavor as you desire. This week's financier flavor is Chocolate Chunk! The recipe is so simple and I was able to pretty much copy the instructions from my matcha financier recipe with only a few alterations. Enjoy. Chocolate Chunk Financiers: 75g Almond powder 35g Flour 150g Powdered sugar 80g Egg whites 100g Butter, melted 2 Pinches of salt 1t Vanilla Chocolate, chopped Preheat your oven to 180C Mix the first four ingredients in a medium sized bowl to combine. Next, add the egg whites and whisk in (the mixture will be very sticky at this point). Pour in the butter and whisk to incorporate, followed by the vanilla. Using a rubber spatula, scoop out the batter into a pastry bag. At this point I tend to let the batter rest so it hardens slightly and is easier to pipe into the molds, but this step is optional. Lightly butter silicone mold and pipe in the batter about 3/4 of the way up. Place a few chunks of chocolate into each mold and bake until the batter is set and they just begin to brown. Remove the financiers from the oven and let cool slightly before trying to demold, as they will be less likely to break. Allow to cool before eating.
